Radiant Fruit Salad*

4th of July is this weekend? Already?! How was I not aware of this sooner? This has to be somebody’s fault. As you all know, I love all holidays, but summer holidays are my favorite. They’re laid back and relaxed and in my opinion always have the tastiest food. A plethora of different salads, grilled food, and family fun … my definition of a great time!

Keeping the laid back & refreshed theme of 4th of July in my head, I created a not-so ordinary fruit salad. What’s not refreshing about a fruit salad? And let me tell you, it certainly fulfilled the laid back & refreshed theme! Heaven in the form of a fruit salad!

The dressing is zesty, sweet, minty, and DELICIOUS, and pairs wonderfully with the different combinations of fruit. This sweet treat perfect for any summer BBQ as a dessert or just as a refreshing palette cleanser.

Why not create this dazzling fruit salad this weekend? Your guests will certainly be impressed!

1/3 cantaloupe, cut into 3/4-inch chunks (about 2 cups)
1 (16 ounce) container strawberries, quartered (about 3 cups)
5 medium kiwis, peeled and cut into 3/4-inch chunks (about 2 1/2 cups)

3 tablespoons honey
3 tablespoons fresh lime juice*
1 teaspoon lime zest
3 tablespoons finely chopped fresh mint leaves

*I used juice from two whole limes. Ya’ll know my love for lime…

Place all of the fruit into a large bowl. In a small bowl, whisk the honey, lime juice, zest, and mint. Right before serving, pour the dressing over the fruit and toss gently to combine.
