Tangy Lemon Bars

Phew! The finally heat broke, it was starting to get a little crazy. Thank you, Mother Nature for bringing CT weather back to normal temperatures!

For our weekly family Sunday dinner, I wanted to make something that required little oven time but was still mouth-watering. You all know my families’ love obsession with citrus, so when thinking of a dessert to make was effortless. I haven’t had a lemon bar in ages … longer than I’m okay with. This tangy, yet sweet dessert is incredibly refreshing and perfect for these hot summer days.

Crust
Prepare ½ cup of splenda
Prepare ¾ cup of almond flour
Prepare ½ cup of butter
Prepare ¼ cup of oat flour

Filling
1 cup splenda
¼ teaspoon salt
2 eggs
½ teaspoon baking powder
2 tablespoons lemon juice

Directions
-Set oven at 350 degrees and bake crust for 20 minutes
-While crust is baking, whisk your eggs & lemon juice together
-Once eggs & lemon juice is mixed well, whisk in other ingredients and let sit until crust is done
-Pour mixture over the hot crust and bake for 15-20 minutes.
-Let cool and place in refrigerator to let cool (makes it easier to cut if it is chilled)

Even boyfriend, the one who’s not a huge citrus lover, thought they were to die for! I think we’re finally starting to convert him over ;)
