Autumn is in the Air

With Fall appearing what seems like over night, my body is already craving warm, filling breakfast foods. I’m a very consistent eater, I eat nearly the same things everyday for breakfast and lunch (dinner is usually when I’m feeling adventurous and try something new). This time of year is when I start switching into my hot oatmeal for breakfast phase (see you next spring, cookie dough cereal!). The possibilities are endless with oatmeal, so although you’re eating the same thing for breakfast, with a few different ingredients, your oatmeal will taste different! The best part? Pumpkins are jam-packed with antioxidants, fiber, vitamins C and E, and is relatively low in fat and calories, so indulging in this pumpkin-pie tasting breakfast won’t leave you feeling guilty.

Ingredients
-1/2 cup old-fashioned oatmeal
-1 cup milk or soy milk
-1/4 cup pumpkin puree
-1/4 tsp pumpkin pie spice
-Dash of salt
-1 Tbsp chopped nuts
-1 Tbsp dried cranberries
-Honey or maple syrup to taste (optional)

Directions
-Place milk, oats, pumpkin, pumpkin pie spice, and salt in a saucepan
-Bring to a boil. Reduce heat to low and simmer for 5 minutes, stirring occasionally
-Remove from heat and place in bowl
-Stir in nuts and cranberries
-Sweeten with honey or maple syrup to taste
