Mummy Cakes for My Mummy!

What better way to start off a Tuesday (my least favorite day of the week!) then with a little cupcake action? You’re right, there isn’t a better way, especially when their Halloween inspired ;).

Over the weekend we celebrated my Mom’s birthday. 36, right Mom? Now, I know you’re thinking, “Mummy cakes? For a birthday?! This girl has total lost it”. But if you knew my mom (and for those of you that do, you can vouch for me) you know nothing excites her more than dessert and Halloween. Lucky enough, her birthday falls right before Halloween, allowing her birthday parties to always consist of a Halloween extravaganza full of spooky treats, wicked costumes, and tons of fun. Although this year she spent her birthday weekend enjoying the crisp mountain air with a few close friends, her birthday certainly did not go unnoticed back home. To combine her love for both cupcakes & Halloween, L & I baked mummy cakes for our mummy (mommy)!

Ingredients–Cake
-4 ounces unsweetened baking chocolate, broken into pieces
-1/4 cup butter or margarine, softened
-1 2/3 cup boiling water
-2 1/3 cups flour
-2 cups sugar
-1/2 cup sour cream
-2 eggs
-2 teaspoons baking soda
-1 teaspoon salt
-1 teaspoon vanilla extract

Directions
-Heat oven to 350F.
-Grease and flour a 13×9 baking pan. In a large mixer bowl, combine the chocolate, butter and water with a spoon, stir until chocolate is melted and mixture is smooth. Add flour, sugar, sour cream, eggs, baking soda, salt and vanilla; beat on low speed of electric mixer until smooth.
-Pour batter into the prepared pan. Bake 35 to 40 minutes or until a wooden pick inserted in center comes out clean. Cool completely in pan on wire rack

Ingredients–Frosting
-2 cups powdered sugar
-1 teaspoon vanilla extract
-3 tablespoons water
-pinch of salt

Directions
-Combine all ingredients until creamy. Drizzle over cupcakes.
