Christmas Cookies

One of my favorite things about Christmas (other than the crafting, songs, decorating, and tacky Christmas sweaters) is all of the baking that takes place. Especially the cookies. To welcome the Christmas season, I spent my Sunday baking a batch of those lovely little gems. Well, maybe they don’t look so lovely … but they’re delicious, and that’s all that matters in my book!

Ingredients
-1 bag Betty Crocker Sugar Cookie Mix (This is our little secret!)
-1 box pistachio instant pudding mix
-1/4 cup flour
-1/2 cup butter, melted
-2 eggs
-1 cup dry roasted salted pistachio nuts, chopped
-1/2 cup dried cranberries, chopped

Directions
-Preheat oven to 350 degrees.

-In a large bowl stir cookie mix, pudding, and flour. Add melted butter and eggs and stir until incorporated.

-Add pistachios and cranberries and mix well.

-Drop by rounded spoonfuls onto a parchment lined cookie sheet.

-Bake for 8-10 minutes. They will look like they need a few more minutes, but trust me they’re done!

      Yum! You’ll have to try them, they’re quick & perfect cookies to make when you need to make dozens for a cookie exchange!
